Homemade Instant Oatmeal
I prepare single serve Ziploc bags of these on Sundays and just grab them on my way out the door during the week.
This is for one serving.
1/4 cup quick-cook oats
2 tablespoons wheat germ
1 tablespoon chopped walnuts (or so, I just dip the spoon in the bag and hope it’s overfull vs. underfull)
1/2 tablespoon brown sugar (again, or so. Kind of to taste, I guess.)
That’s it! To cook it, put it in a bowl and add about 3/4 cup of liquid**. Cook for 2 minutes in the microwave.If you use a regular size cereal bowl you don’t even have to watch it for boil-overs.
**I use Westsoy Plus Plain organic soymilk, but regular milk (2%, skim–whatever) works too. I don’t measure it, depending on whether I want my oatmeal really thick or just normal. I’ve never tried water, but that’s because I don’t like oatmeal cooked with it. If you like it, great! Use that!
***Sometimes I also put in 2 tablespoons of dried cranberries. If I do, I reduce the brown sugar, or else it’s too sweet for me.
