No-Bake Cookies
I first started making these in 7th grade home-ec, and never really stopped. Back then we called them Mountain Bars, but at some point I transitioned to the other widely-used ‘No-Bake’ title. And I am consistently amazed that other people have not had, or even HEARD of these.
Easiest. Cookies. Ever.
2 cups white sugar
1/2 cup milk
1/2 cup (1 stick) butter (BUTTER, not marg.)
2 tablespoons unsweetened cocoa
1/2 cup smooth peanut butter
3 cups quick-cooking oats
1 teaspoon vanilla

Bring the sugar, milk, butter, and cocoa to a boil over medium heat. Boil EXACTLY one minute, stirring constantly. Remove from heat and add the vanilla and peanut butter, stir until smooth. Add the oats, mix well, and drop by spoonfuls onto wax paper. Let set until hard (if you can wait that long) and eat!

Do you know how long I’ve been waiting to make no bake cookies??? All this time I’ve been unnecessarily baking my desserts.
